Bristo Chicken

 30 mins       Serves 2         Non Vegetarian

INGREDIENTS:

2 fillets chicken breasts, marinated
100 gms spinach, chopped
1 cup mushroom, purée
3⁄4 cup mushroom, sliced
1 medium tomato, diced
1 medium onion, finely chopped
1 tbsp oregano
1 tbsp red chilli flakes
1 medium capsicum, finely chopped
8-10 basil leaves, chopped
1 tbsp rosemary, chopped
1 tbsp parsley, chopped
salt and black pepper to taste

For Marinating

2 tbsp oregano
1 tbsp red chilli flakes
2 tbsp lemon juice
1 tsp cumin powder (jeera)
salt and black pepper to taste

DIRECTIONS:

1. Preheat the skillet on a medium flame.

2. Add all the ingredients and cook on a medium flame with the lid on and Redi- Temp® valve open for 20 minutes.

3. Once the valve whistles, close the Redi- Temp® valve and cook on a low flame for 5 minutes.

4. Turn off the flame and rest the pan for 5 minutes.

5. Serve with coleslaw and honey glazed cherry tomatoes.
