Green Thai Curry

 10 mins       Serves 4         Vegetarian

Ingredients:

1 cup green curry paste
2 1⁄2 cups coconut milk
3⁄4 cup cottage cheese (paneer), cubed
1⁄2 cup baby corn, sliced
1⁄2 cup carrots, sliced
1⁄2 cup broccoli, florets
1⁄2 cup red bell pepper, cubed
1⁄2 cup green bell pepper, cubed
1⁄2 cup mushrooms, sliced
1 tbsp sugar
to taste salt
For Green Curry Paste
1 cup coriander, chopped
8 green chillies, chopped
1⁄4 cup lemon grass, chopped
1⁄4 cup onion, chopped
1 clove garlic, chopped
1” ginger, chopped
1 tbsp coriander powder
2 tbsp cumin powder (jeera)
1⁄2 tsp lemon juice
to taste salt

Directions:

1. Blend the green curry paste and keep it aside.

2. Preheat a dutch oven on low heat; add green curry paste and sauté for 2 3 minutes. Add the coconut milk, salt and sugar. Stir well.

3. Add all the vegetables and paneer.

4. Cook on a medium heat with the lid on and the Redi-TempTM valve open.

5. Once the valve whistles, close the Redi- TempTM valve and cook on a low heat for 3-4 minutes.

6. Serve hot with rice.
