Pav Bhaji

 20 mins       Serves 4         Vegetarian


2 cups tomato pureé
3 medium onions, chopped
2 medium tomatoes, chopped
1 cup cauliflower, florets
500 gms potatoes, diced
1 cup green peas
1 large green bell pepper, chopped
2 tbsp pav bhaji masala
1 tsp red chilli powder
1⁄2 tsp turmeric powder
to taste salt

For Serving

1 cup onions, chopped
4 lemon wedges
8 pav
to garnish coriander leaves, chopped


1. Preheat the dutch oven on low heat.

2. Add chopped onions, tomatoes, pav bhaji masala, red chilli powder, salt and turmeric powder and cook on medium heat with the lid on and the Redi-TempTM valve open for 2-3 minutes.

3. Add the cauliflower, potatoes, green peas and green bell pepper along with tomato pureé. Cook on medium heat with the lid on and the Redi-TempTM valve open.

4. Once the valve whistles, close it and cook on low heat for 3-4 minutes. Mash the mixture well with a vegetable masher to desired consistency.

5. Garnish with coriander and serve with lemon wedges, chopped onions and pav.
