Quinoa Breakfast

 14 mins       Serves 4         Non Vegetarian

INGREDIENTS:

1 cup quinoa
1 tablespoon olive oil
1 teaspoon garlic, minced
3⁄4 cup cherry tomatoes, halved
6 eggs, beaten
1⁄2 cup feta cheese, crumbled
1⁄4 cup basil, minced
1 teaspoon cinnamon powder
1 teaspoon allspice
1 teaspoon cumin
Salt and black pepper to taste

DIRECTIONS:

 

1. Add quinoa and 1 cup water in a saucepan. Cover it with the Redi Temp® valve open and cook for 1.5 minutes on medium-high flame until it whistles. Reduce the temperature to low and, when the valve stops whistling, close it and cook for another 8 minutes.

2. Add olive oil and preheat the Gourmet Skillet on medium-high flame for about 3 minutes. Add garlic and tomato; stir constantly.

3. Add the remainder of the ingredients. Keep stirring for approximately 3 minutes.

4. Serve hot.
