Spinach tacos with avocado salsa

 7 mins       Serves 4         Non Vegetarian


2 avocados, pitted and sliced
1 pepper, whole and stemless
4 coriander leaves
Salt to taste
1 pound baby spinach
1⁄4 cup onion, sliced
1 teaspoon garlic, chopped
1⁄2 cup chicken broth
4 corn tortillas



1. Blend all salsa ingredients together and stir for 2 minutes. Pour the salsa into a mixing bowl, cover and refrigerate for 10 minutes.

2. Preheat the Gourmet Skillet on medium-high flame for about 3 minutes; add onion and garlic; sauté for 1 minute. Add spinach and chicken broth, stir constantly for 3 minutes on low heat.

3. Preheat the Griddle on medium-high flame for 3 minutes. Reduce the flame to low and place the tortillas; cook each side for 1.5 minutes.

4. Place cooked spinach on each tortilla, top with avocado salsa and serve immediately.
