Sukkhe Aloo

500 gms peeled potatoes, diced
1⁄2 tsp turmeric powder
1 tbsp coriander powder
1 tbsp red chilli powder
1⁄4 tsp asafoetida powder (hing)
1 tbsp cumin seeds
1⁄2 cup coriander leaves, chopped
to taste salt


1. Preheat the skillet on medium heat; add the cumin seeds and let it splutter. Add the potatoes and stir well.

2. Place the lid on with the Redi-Temp® valve open. Once it whistles lower the heat and close the Redi-Temp® valve.

3. Open the lid and add turmeric powder, coriander powder, red chilli powder, asafoetida powder and salt.

4. Stir well and place the lid on with the Redi-Temp® valve closed. Cook for 4-6 minutes.

5. Open the lid and add the coriander leaves. Stir well and transfer it into a
serve ware. Serve hot with rotis.
