Vegetable sauté

 10 mins       Serves 4         Vegetarian


2 teaspoon  olive oil
1⁄4 cup red onion, slices
2 cups spinach
1 cup baby carrots, chopped
1 cup water chestnuts
1 cup mushrooms, sliced
1 cup peas
1 cup celery, sliced
1⁄2 cup green olives
1 cup bean sprouts
1⁄2 cup green onion, chopped
1 teaspoon garlic, minced
1 cup chicken broth
2 teaspoon oyster sauce
to taste salt and pepper


1 In the Wok, add 2 teaspoon olive oil and preheat at medium-high heat for about 3 minutes. Add onions, chestnuts, mushrooms, peas, celery and olives. Cook for 3 minutes; stir occasionally.

2 Add the remaining ingredients, except the chicken broth and the oyster sauce, cook for 2 more minutes.

3 Reduce heat to low, add chicken broth and sauce. Cook for 5 minutes. Serve with your favorite fish or rice.
